Mushroom & Lentil Tacos

Ingredients
- 1½ teaspoons canola or other neutral-flavored oil
- 1 cup cooked Lazy Lentils
- ½ cup mushrooms, minced
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- 1 cup stemmed and thinly sliced kale
- 6 tortillas, warmed
- 1 avocado, pitted, peeled, and sliced
Optional toppings:
- Fresh or caramelized onions
- Vegan sour cream
- Shredded lettuce
- Halved cherry tomatoes
- Microgreens
- Cashew cream drizzle
Instructions
- Heat the oil in a sauté pan over medium-low heat. Add the lentils, mushrooms, chili powder, garlic powder, cumin, smoked paprika, salt, oregano, red pepper flakes (if using), and kale, and sauté for 3 to 4 minutes. Add 1 tablespoon of water if the filling seems dry.
- Serve on the warmed tortillas topped with the avocado and any other desired toppings.
Ingredient Variation
Save time by using half of a 1-ounce package of taco seasoning instead of the individual spices. If you like it spicier, use the whole package.
